This is a taste of our place, born out of our unique ecosystem of the San Juan Islands. The Pacific Madrona is a beautiful native tree that grows on the rocky slopes and forest clearings of the Pacific Northewst. San Juan Islands Salt collects fallen branches of the tree on the island and uses them to cold smoke their sea salt. The smoked salt has a hearty, smoked salmon like aroma, with a soft brown caramel color.
